If you are searching for perilla oil noodles in Seoul, most results point to a few famous noodle houses. We are a Korean pub near Euljiro 3-ga Station, not a noodle shop, yet a dish our guests keep mentioning in reviews is this one: deulgireum makguksu, cold noodles tossed in perilla oil and a savoury soy dressing. One guest wrote that it tastes like perilla oil pressed at a local mill. Here is how our three noodle dishes differ and what people order with them.

Deulgireum makguksu (perilla-oil makguksu), 13,000 won

Deulgireum means perilla oil. The noodles are tossed with a seasoned soy sauce and a generous pour of perilla oil, so the first thing you notice is the nutty aroma. Guests describe it as rich and toasty rather than tangy. If you prefer something sharper, the next two are for you.

Yukjeon makguksu, 11,000 won, and yuzu kal-bibim noodles, 14,000 won

Yukjeon makguksu is a cool, lightly brothy makguksu topped with beef yukjeon, thin slices of beef pan-fried in egg batter. Guests describe it as tangy and slightly sweet. Yuzu kal-bibim noodles use chewy knife-cut noodles with a yuzu bibim dressing that guests describe as a little spicy, and beef yukjeon on top. So the line-up is nutty, then tangy, then a little spicy.

Many guests add beef yukjeon

Our beef yukjeon is pan-fried one slice at a time and costs 29,000 won. The two noodle dishes above already come with yukjeon; with deulgireum makguksu, some guests add a plate of beef yukjeon to share. Others add hanwoo beef tartare or a kimchi pancake as well. One guest wrote that it was easy to finish even on a full stomach, and a few come at lunch just for the noodles.

Makguksu versus naengmyeon

Both are cold Korean noodle dishes. Naengmyeon, the Pyongyang style in particular, is usually served in a chilled broth, often beef. Makguksu is associated with Gangwon Province and is tossed with a dressing or a small amount of broth. Our deulgireum makguksu is served without broth, just the soy dressing and perilla oil. If you have a buckwheat or wheat allergy, please tell our staff before ordering; the exact noodle and dressing ingredients are best confirmed on the day.

How to get here and how to reserve

From Exit 10 of Euljiro 3-ga Station, turn into the first alley and walk straight; we are about 95 metres from the exit. The address is 1F, 13 Euljiro 14-gil, Jung-gu, Seoul. There is no parking. Reservations are open for 1 to 8 people at lunch and 2 to 8 at dinner; for more than 8, please call us. Last order is at 2:00 AM.

Is deulgireum makguksu a lunch-only dish?

Three dishes on our menu are marked lunch-only: yukjeon gomtang, hanwoo beef tartare bibimbap and grilled marinated pork ribs. The three noodle dishes carry no time marking. Please check with us on the day for what is being served.
